Cookware should last you a LIFETIME! The best options are uncoated and the material is a matter of preference. Stainless Steel, Cast Iron, Carbon Steel & Titanium are all great options. Cast Iron and Carbon Steel can leach iron, so take that in to consideration.

This is my top pick and what I have in my home. There is a place in my kitchen for my cast iron pan and stainless steel pots, but the vast majority of my cooking is done on my Titanium Pro set. It's uncoated, but the grooves in the Titanium create a non stick surface when cooking oils are added. I love them so much and they are indescrtuctable and will last a lifetime.
Non PFAS ceramic coated pans have a non-stick coating, but keep in mind... they will not last very long. These coatings are non-toxic, but the formulas are proprietary. If you want them for the convenience (or just because they are super pretty!) these are the brands I would pick.
